Carol Salas, Registered Dietitian and Nutrition Consultant in New Jersey, has more than twenty-five years of experience in nutrition counseling and medical nutrition therapy. She is also a Certified Diabetes Educator (CDE). She was formerly on the staff of the Diabetes Management Program at the University Medical Center at Princeton and currently maintains a private practice in Kendall Park, New Jersey.

As manager of Nutrition Services for one of New Jersey’s largest managed care companies, Carol participated in the health care of a wide variety of both adult and pediatric patients. She has developed extensive patient educational material and co-authored and appeared in four educational videos. She has presented seminars at national meetings of the Academy of Nutrition and Dietetics (formerly the American Dietetic Association), at various state meetings and has appeared on the Steve Adubato television show. Carol has guest-lectured regularly at Columbia Teachers College, graduate level.

Carol holds a masters degree from Rutgers University and completed her dietetic internship at Massachusetts General Hospital. She is a member of the Academy of Nutrition and Dietetics, the American Association of Diabetes Educators and the National Eating Disorders Association.
